I find that some matured GICs are in my account early AM in the day of.
Others later in day and some next day. The latter I believe are those ones that I called in and advised to collapse GICs on the maturity date well before hand but do still get automatically rolled over to a new GIC and then manually cashed out later in day or next day. Any time that I have called the FI, they dissolve it immediately for me.
I have been caught the odd time as I use the maturity dates on my excel program BUT let’s say a 5 year GIC becomes a 5 year GIC plus 2 day GIC based on the non banking days around the maturity date. So check the official maturity date online before you react.

Remember that in the case of brokerages where the broker is just the agent for the issuer, the brokerage cannot post anything until the issuer gives them the information. Then depending on the brokerage's processes, one or more of interest and principal may be available same day or not until the next day. It may not be consistent among the brokerages.
